So I have a recipe that I have never made before but others might have! I didn’t take pictures so just imagine what it looks like. Peaches always look the same anyway, no matter if they are in a really nice farmhouse basket or if you bought them in a can. The canned ones are peeled and so you don’t even have to prepare them!!

40 ounce can of peaches: place them in a pot of some sort with some sugar and don’t drain the juice. Boil them until they become thick. then use a potato masher to chunk them in the pot.

Use any tortilla recipe that you like. I just use flour and oil, water and a pinch of salt. Add flour until it’s dry enough for you to be able to roll out with a rolling pin without the dough sticking to it.

Flour the counter and the rolling pin. Measure the dough with a 1/3 measuring cup so that each tortilla is the same size! Roll each one until they are evenly about 1/8 of an inch thick. Place that rolled one in a pan that has been oiled and on medium heat. When it bubbles flip with fork or pancake turner to other side. 15-20 seconds each side. Put all together under a towel and they will cool and become soft and pliable.

Cut one in half and put a scoop of the peaches on top. Add some heavy whipped cream right out of the carton. Or you could whip it into whipping cream as well in a blender or with beaters.

This reminds me of a time when I visited my grandmother. She asked me to beat some heavy whipping cream for her. She gave me one of those hand beaters that you have to turn, manually. She always had these things like rotary phones or whatever was from 100 years ago and she would make me use them. But if I were to show up randomly and my cousins were there, then I would see THEM using electric beaters. This time I just took it for granted that she didn’t have beaters because she probably trashed them, or they got lost, or she forgot that we now have those! So I didn’t complain, because then nothing was fun. It took me hours to get it manually beaten into whipping cream with that horrible thing. She just sat at the table and watched me struggle! Then when I was almost done she pulled out her electric beaters and said I could finish beating tge HWC with those because I was TAKING TOO LOENGGG!
