I was in the mood for some tomato soup! so I decided to add some vegetables too
2 tbs (table spoons) of minced garlic
2 tbs of butter
chopped onions or whatever onions you like. I like the onions that are chopped in a jar and are somewhat spicy.
fry all of that together
while it is frying…
1/3 of a bag of frozen vegetables. the bag is 1 lb (pound) and 4 oz
put that into the blender after rinsing with a couple dots of soap to clean that vegetable bacteria off!
cover the vegetables with water and blend until the vegetables are small. That way you cannot see what they are.
put all of that into the butter and garlic. (Do not drain the water! it is part of the soup)
add in a 15oz can of tomato sauce
and 2 Tbs of avocado oil. I added it last and stirred it in. I wanted it sort of rich and oily.
salt, pepper, onion powder and more garlic powder if you want.
Its done!
just let it simmer a little.
yummy! You can have some flat bread with that. I have that recipe somewhere on this blog. it will be hard to find because nothing is organized and completely random. but it is labeled at least
