I wanted some type of vegetable pie that had sourdough crust of some sort so here is what I came up with
sourdough flat bread recipe:
1/4 cup of sourdough starter
1/4 cup water
1/4 cup oil
1 1/2 cups flour (you can add more or less for the flour, you want to be able to spread it onto parchment paper so it is supposed to be soft and a little gooey)
1 teaspoon (tsp) salt
if you want Italian flat bread you can just add Italian spices. You can find that type of blend that is labeled that way.
put this aside
for the vegetables to be added:
handful of onions chopped
1/2 stick butter and 1 1/2 tablespoons (TBS) of minced garlic
fry that and then add a pinch of salt to make it break down faster
take any kind of vegetables that you want, I chose peppers and spinach
The frozen peppers from the store are already sliced, I put half of a small bag into a strainer and added a few drops of dish soap and rinsed them. this will kill any bacteria that could be there. there will be a few suds left but it will all evaporate off. so just add them to the butter and add another pinch of salt so they will become translucent faster.
I took a bag of spinach from the produce section and I had frozen it. I do not like frozen spinach because it gets all bunched up into chunks. I took 1/4 of the small bag out and added a few more dots of soap and rinsed those as well and added that to the butter. I use dawn dish soap. I use that to wash my hair and face and brush my teeth so I know that it is safe.
while that is frying together the mixture should have enough butter to create a sauce so if you didn’t add enough butter add some more and fry that in with the rest as well.
while that is frying take the dough and spread 3/4 of it onto some parchment paper, or you can use a tin pan or glass dish. just spread oil in the bottom if you are not using parchment paper. if you are using parchment paper you can use a cookie sheet to bake everything on.
I spread the dough out to be about an inch thick all over
then add your vegetables and the butter on top of the dough and sprinkle Parmesan cheese on the vegetable mixture
then add the rest of the dough on top in small pieces. some of the vegetable mixture will be showing and that makes it pretty.
bake it at 350 degrees.
I had this yesterday and it is so good. the dough, once it is cooked, looks different than regular flat bread because it has the sourdough starter in it. It may look a little shinier and not as rough looking when done.
