Here is a tip for oatmeal cookies. Take any recipe that you like. Make sure that you cream the butter and sugar together first then add in all of the other ingredients, except the oatmeal. Fold in the oatmeal with a spatula at the end and do not use beaters if you want them to stay as cookies. If you want more of an oatmeal cake or quick bread then use beaters as it destroys the oatmeal into small shreds. Do not mix the oatmeal in for too long because whatever you are making will become tough. And the outside will bake up hard and it won’t be soft and tender anymore on the outside.
