I stopped eating dairy a while back because that is what people get rid of if they have an unknown food allergy. I felt better but not totally. But then I remembered something that I had gotten a blood test for, I and one of my sons. We both had went to a holistic doctor. He was a licensed doctor for both western medicine and being a holistic practitioner. He helped the most out of many. When we lived in Colorado. We got blood tests! Omg! A doctor willing to do a blood test! So we were both anemic. Then we got the results back for the other blood test and we have the antigen for not being able to process gluten. I did take it very seriously for my son but not really for me! Well I had forgotten about it for me for a few years. Maybe it isn’t the dairy, fairy, I says to myself…so now I am trying to find stuff to eat cuz, why not?? But I have to bring my reading glasses to the store to look at labels now, seriously these gluten free circle labels are so small and sometimes non-existent. Ok anyone who has to do this; what about already ground coffee, tea and the anti-caking agents in shredded cheese and what about organic potatoes in the bags?? What do they have on them as preservatives to make them last? Does it have gluten in that? I read that tea bags are sealed with ‘wheat glue’ hmmmm…. Can I just take it out of the tea bag? Or is there an anti-caking agent on tea leaves and is it a preservative with gluten? There is quite a bit to worry about with this. I really stopped caring for a while about it with myself, but now I care because my eyes get puffy for no particular reason and I feel like I mowed the lawn every day with all of that dead grass flying through the air. What about flour? I will have to order plain flour, such as any of them like sorghum or buckwheat etc… the store here, Albertsons, doesn’t have those. They do have a lot of gluten free products which is totally awesome but they only have the boxed or bagged mixes that have baking soda or baking powder, xanthum gum etc..already mixed in. But what if I can’t have xanthum gum neitheren?? Or like corn? Or anything else? And I would like to make sourdough starter, so I want buckwheat or sorghum flour only. So they do have coconut flour and almond flour but… and what about this other situation that is really bad in my opinion. Soooo, I had bout some coconut flour and almond flour at Walmart. I had put these into the trash…why? They do not have the gluten free circles on them. But! On one bag it definitely states ‘perfect for gluten free baking’. But there is not gluten free circle on that or any of these pictured.


So I had to put them into the trash. I am still trying to figure out all of this while losing money. This is misleading for all people.

What about coffee? Do I have to get beans and buy a coffee grinder? That is a lot of work and I like buying coffee that is already ground. Is that my one complaint? No, all of these gluten free items; crackers, cookies etc..are soooo expensive! A person has to make these things on their own to afford them on a continual basis. Why would it be that expensive for these corporations to make these items?? Is it that expensive?? Or do they mark them up more than the items with gluten because they can and they know that people actually HAVE TO BUY these items to be happy and to stay well. Right? Well yes. Cookies make me happy and crackers and chips but I guess they HAVE to be gluten free. And what about the items that have the false advertisement about how it’s perfect for gluten free baking but not have the gluten free seal?
