I made something today that reminded me of these breakfast burritos that I used to get from this small restaurant where I used to live. They were only 1$. I wanted to eat them everyday, they were so good. It isn’t really a recipe because its just putting things together so no measuring. If you don’t measure I think its not an official recipe, way easier!

fry 1 pound of chicken or any leftover meat that you have you can use
add in onions if you like them and peppers. To make it easier just buy the frozen peppers that are already chopped. but buying frozen is more expensive I think, but I could be wrong.
add in minced garlic and a pinch of salt if it hasn’t been salted.
Then once the meat is reheated or fried for the first time add in a 10 oz can of green chili enchilada sauce. You can use red sauce but I hate that kind, but feel free.
heat some tortillas up in the oven (only for adults) just place them on the racks for 1 minute and flip over in a 500 degree oven to make them soft and pliable
throw some cheese on top of the chicken and green chili and let it melt. don’t forget to take out the tortillas.

to save money:
use a whole chicken that you have baked or put into an instant pot
use and combination of beans and chicken or just beans
use dry beans instead of canned. just use an instant pot or an old fashioned pressure cooker (which is more dangerous and scary).
make your own tortillas.
butcher your own chicken, make sure its not a pet. If you do that, just rename another chicken the same name because they all look the same.
the last one will make this meal more time consuming though and not as fun.

I almost forgot the eggs. Scramble some eggs in a separate skillet and add to the burrito.
it is one egg per 1/4 cup of milk for scrambling. you can put that in a blender, use beaters or just add the milk into the skillet and add the eggs and whisk them right in the pan/skillet while they are frying. make sure that you use a stainless steel whisk because the coated ones will melt. but first add in oil to the skillet, cold. then add in the milk and then the eggs while the skillet is on medium heat or high if you are impatient. Make sure that you keep scraping the bottom of skillet whatever process that you start out with so the eggs do not burn, then you will have brown pieces of egg in the whole mixture. But for burritos if that happens it doesn’t matter. The eggs will tend to coat the bottom of the pan which will not allow the rest of the eggs to cook evenly so just keep scraping with some kind of utensil. if you do not use milk they will not be light and fluffy they will be rubbery, but some people really like eating rubbery eggs. The great leathery eggs debate. You can use canned milk or any kind of milk or powdered milk as well. (make the powdered milk into milk first though) the directions are on the back of the box.

Make sure that you do not measure any of these things, way easier.
