eggless oatmeal cookies recipe by Margaret Leora Workman; Warponie art

I wanted to share this recipe with you because I am excited to have found that pears can be substituted for eggs. I did not have any eggs so I tried the pears because I had a few cans of pear halves. I have tried apple sauce before for this and it sort of works, but the pears work better in my opinion.
also if you need a stick of butter to be at room temperature faster than waiting over night for them to become room temperature then, turn on the oven to 350 degrees
take an aluminum pan with some parchment paper on top and place the stick of butter still in the package that its in and place it on that parchment paper. check it in 30 minutes. it will eventually turn to room temperature but it you wait an hour it might melt.

take that stick of butter at room temperature and 1 cup of sugar and cream them together until the color of it turns white and it will be somewhat stiff.
scrape the sides and the bottom of the bowl twice during this process
add in 4 halves of some canned pears. this will equal 2 whole pears
I used a small hand mixer. mix until you cannot see the pears anymore
add in 1/2 cup of flour and beat that for a while. You want the flour taste to disappear
then stir in 2 cups of oatmeal.
bake at 350 degrees check after 12 minutes to see if they are done.
Since they are eggless you can eat these even if you accidentally pull them out early. The edges of the cookies will look more formed as they are baking and once they turn a slight golden brown then you can pull them out.
I took out 1 cup of this mixture and made two cookies. I liked these, they were very soft after baked and became flat in the oven but still extremely good. I refrigerated one over night and it was still the same.

After taking out that 1 cup to make the first set of cookies I then added 3/4 of a cup more flour to the rest of the mixture and chilled overnight.
I made the second mixture the next morning and they held their shape and were extremely good. They were still soft but firm and did not flatten out.

If you do not want to use an oiled cookie sheet then use parchment paper(not wax paper) and place it on the cookie sheet and then put them on the parchment paper. the paper will not burn unless you use it twice in the oven. It will char it but it never catches fire. I think it would fall apart if you decided to use it 3 times in the oven.
