I decided to make something instead of just eating chicken out of the can with a plastic fork. I know that plastic is not good for the environment anyway. I wanted to make something that had some sort of crust like a pot pie, but have you seen some of those recipes?? I don’t want it to be difficult! Anyway, yes I should not speak about another person’s recipe because maybe it is easy for them. Have you ever had chicken and dumplings? it sort of came out like that but way easier. I remember this meal being made when I was young and it seemed completely difficult. With this one you can see that the dumpling is actually being cooked.
12.5 oz of canned chicken drained
3/4 bag of frozen vegetables. you could probably use canned as well.
canned or boxed chicken broth. a couple of cans or 1 box
fry the vegetables in oil. you can use any type of skillet or pot, whatever you have on hand.
add the drained chicken and leaven in the pot, add pinch of salt.
while that is cooking;
1.5 cups of flour. you can add more if you want more dumplings
3 Tablespoons oil. any type
pinch of salt and enough water to make a thin dough like substance. thicker than pancake batter. more like bread dough
divide that into 2 parts and spread it into the pan in the formation of a pancake. I mixed the dough in a coffee cup.
pour some chicken broth on top and let it sit on top. you want the bread to be cooked but really moist
flip when the bottom of the bread is cooked. then add more broth on top of the bread and let it sit.
the heat should be medium high so it frying it but not burning it or making it hard. add more broth. make the broth sit with the bread and not in the rest of the veg and chicken part.
its ok if some of it creeps over but add more to the bread. while that is cooking;
for the gravy
1/2 cup of corn starch
add just enough chicken broth to make it a thick batter with no lumps. the temperature of the broth should be room temperature, not heated.
add that mixture to 2-3 cups of broth. this will get rid of lumps in all of it. DO NOT JUST ADD THE CORNSTARCH to the whole 3 cups of broth!! it will be lumpy!!!!!!!!
turn up the heat of the pot to low-high
add the broth to all of it.
if it starts becoming too thick add more broth or water. the gravy will cover the dumplings.
if you do not like how thick the gravy becomes then next time you can add a smaller amount of cornstarch.
you can also make a roux for the gravy. whatever you like. if you do not have cornstarch this is just as easy.
all you have to do is take some flour and add butter, stir that together in a low heated pot. Then when that is incorporated add in a little chicken broth at a time and turn up the heat more and more as you keep adding the broth. add salt.
