Accidental Zucchini sauce recipe by Margaret Leora Workman; Warponie Art

Make angel hair pasta and set aside.

Take a large zucchini and use a food processor to chop/mash it. You could use a blender as well. Put that into a skillet and fry it with oil. Start with 2 tablespoons. Use a pinch of salt so that the vegetables will break down. I also used garlic powder and Cajun seasoning. Fry that until it starts releasing some moisture and then add 1/4 cup flour right on top. Add another tablespoon of oil and fry that together. Once it’s like a paste add that on top of the angel hair pasta! This was an accident, I wanted to make something else, but it is the best thing I have ever eaten! Tonight I tried this with yellow squash and I added it to mashed potatoes, it was soooo good! If you have one of those spiral slicers for vegetables, you could add this sauce to some of those, or what about frying some frozen vegetables and adding it on top of that? I try to eat more vegetables anyway but I am afraid of getting the bird flu from beef, chicken, eggs and dairy. Some might say that is an over reaction.
