Egg enchiladas by Margaret Leora workman; Warponie Art

I made a new egg dish. I try to like scrambled eggs and this helped! This is enough for 2 to 3 people.

7 eggs. 1/8 cup half and half. 1/4 cup flour. Small can of chicken. 1/2 cup cheese. 1 can diced potatoes. Green chile sauce.

Turn on the burner to medium heat and add in 7 eggs to the frying pan. You can use any pan that you want. Add in 1/8 cup half and half or milk. Start whisking that all together with a whisk or fork. Then while it’s turning into cooked eggs take 1/4 cup to 1 cup flour and spread it over that and mix it in. Fold it over and over together. Add in a small to medium size can of chicken, drained. Fold that in. Add in 1/2 cup cheese on top and then green chile sauce. Because of the flour it tasted like enchiladas to me. If you want to add in a can of diced potatoes fry them in oil before to make them crispy. Drain them, add salt, and set aside. Then fold them in before adding cheese and green chile.
