I started adding coconut flour to my sourdough flat bread and it tastes really good! I normally don’t like coconut flour. I don’t have a specific recipe because the measurement work out either way.
1/4 cup sourdough starter
1 1/2 cups flour
1/2 cup coconut flour
1/8 cup vegetable oil or whatever you have
Prince of salt
Then add enough water to make into a paste
Get two pieces of parchment paper and place them on a cookie sheet. Place all of the dough in between the two pieces and press the dough out flat in between those two pieces of parchment paper to the thickness that you want. You can do this with your hand or a rolling pin. Put the mixture in a 400-450 degree oven and leave both of the parchment pieces on. Bake for 15 min. Check to see if it’s baked as long as you want it to be. The longer you bake it, the crunchier it will be. Let it cool. You can add sauce, cheese and pizza toppings as well. Then bake it until the cheese is melted.
For the sour dough starter: take 1/2 cup of flour and add almost a 1/2 cup of water. Every day keep adding 5 tablespoons of flour and almost equal amounts of water as well. use this every day for bread or pancakes or whatever. It will sometimes turn watery, just stir it back together. I keep mine in the fridge and I don’t leave it on the counter. It never turns brown. If it does, I just stir it back in. Many people discard some of their sourdough starter but I never do that. I am not sure why people do that. Many people have directions as long as history for sourdough starter. Just do equal parts of both flour and water each day, and leave it in the fridge. Cover it with Saran Wrap. Sometimes put it into a clean glass dish, and wash the current one.
